It is nothing different than a turkish version of scrambled eggs, eaten at any time of the day, available in every “lokanta” (equivalent fast-food). It is served in two forms – the one shown in the picture with a fried egg, or with a scramble egg, like for scrambled eggs – without any damage to taste, but certainly with damage to view and to the eyes.

Ingredients

  • 1 onion, chopped 

  • 2 eggs (portion for two)

  • 1 pepper chopped (no matter which one)

  • 3 tomatoes, peeled and stalked, cut 

  • olive oil

  • salt

  • hot pepper to break the taste (obligatory in my opinion)

Directions

  • Heat the oil in a frying pan, throw in the chopped onion and fry until will glaze and we can start.
  • First we will add chopped pepper, because it is the hardest and we will fry longer. The next one (after 3-4 minutes) we add chopped tomatoes, salt, add hot peppers, we mix and fry on low heat.

This soup is probably popular all over the world, domates çorbası in Turkish, tomatosupa in Greek. Below I present the Turkish version, which I liked the most.

Ingredients

  • 4-5 large, ripe tomatoes (can be replaced with a can of tomatoes)

  • tomato paste (150 grams)

  • 1 onion

  • 1 carrot

  • 4 tablespoons of flour

  • oil for frying

  • 1 teaspoon of sugar

  • 1 tbsp salt

  • 1 stock cube

  • 1 tbsp hot pepper

Directions

  • We put in a pot with water (medium-sized pot), put in it a sliced carrot, stock cube and bring to a boil.
  • Glaze the onion in a frying pan and add flour to make a roux.
    When the water in the pot boils, we add a roux and our tomatoes (chopped).
  • After a few minutes, add tomato paste and a teaspoon of sugar, cook the whole for 10 minutes.
  • Taste, if you like, add hot pepper and eventually more salt.
